I stopped in on a Tuesday afternoon around 3:30 p.m. and found a welcoming atmosphere that gradually transitioned from quiet to lively as the evening crowd began to arrive.
One of the first things you’ll notice about Mi Pueblo is its cheerful, inviting ambiance. Holiday decorations, including a Christmas tree, Santa hats, and a nativity scene, immediately set a warm and festive tone.
The interior design is another standout feature, with white, leather-like booths that are not only comfortable but also give the space a modern, polished look. During warmer months, the Eden Prairie location offers a lovely outdoor patio – perfect for dining al fresco while enjoying their flavorful dishes. Whether you’re indoors or outside, Mi Pueblo creates an environment that’s both casual and stylish.
The restaurant also features a full bar, well-stocked with a variety of spirits and mixers. Mi Pueblo’s cocktail menu is especially enticing, offering creative options like the Tropical Vodka, Mezcal Negro, and the signature Black Margarita – perfect for anyone looking to elevate their dining experience. Guests can even upgrade their drinks with premium tequila options such as Don Julio, Casamigos, or Patron for an extra touch of indulgence.
One of Mi Pueblo’s unique features is its versatility in serving customers. In addition to its dine-in option, the restaurant also offers a drive-through for quick and convenient takeout. They even operate a food truck that’s available for catering, which you can book by calling 763-346-1611. It’s a great option for parties, corporate events, or family gatherings, allowing you to bring Mi Pueblo’s flavorful dishes to any occasion. For those who love their food, there are additional locations, including one in Lakeville.
During my visit, I started with their complimentary chips and salsa, which were fresh and flavorful – a classic pairing that set the stage for a satisfying meal. For my entrée, I chose the “Pick Three” combo with rice and beans, selecting a chicken quesadilla, a cheese enchilada, and a ground beef hard taco.
- Chicken quesadilla: This dish was the highlight of my meal. The chicken was perfectly seasoned, and the quesadilla was packed with flavor. While the cheese wasn’t completely melted, it didn’t detract from how satisfying the dish was. I’d absolutely come back for this alone.
- Cheese enchilada: The enchilada had a nice flavor, but unfortunately, it arrived cold. However, I could tell that with just a bit more attention to detail, this dish would have been just as enjoyable as the quesadilla.
- Ground beef hard taco: This was a solid, no-frills taco that rounded out the plate well. While it wasn’t the most memorable part of the meal, it added a nice variety to the combo.
One detail worth noting is the atmosphere during my visit. There was no background music, which created a quieter environment. While some may appreciate the peaceful setting for easy conversation, it also made the sounds of neighboring tables more noticeable. Depending on your preference, this could be a positive or a minor drawback.
The service during my visit was a bit uneven. While my food arrived quickly and looked pretty, there were moments when the staff seemed disengaged. At one point, I waited for my server to check on my food, only to notice him sitting at a bar table, watching something loudly on his phone. While this was frustrating, I recognize that my experience may not be typical, and the overall friendliness of the staff helped to balance the situation.
